ATLANTA and WORCESTER, Mass., April 19, 2018 /PRNewswire-iReach/ — The Gluten Free & Allergen Friendly College Food Service Conference has been established to help bring best practices to food service directors and university chefs across the country. Taking place twice in 2018: May 18th in Atlanta and July 20th in Worcester, MA – the conference brings the best ideas from a number of schools large and small.

«Creating a program that has a few gluten-free options is relatively easy, but establishing a consistent and varied program addressing the gluten-free needs of students with Celiac disease or any of the eight key food allergens is quite a bit more challenging,» said Bill Sell, co-chair of the conference series. «We’re building on a very successful conference a few years ago in Boston that started the dialogue. Ever since the December 2012 ‘Lesley Ruling’ colleges have been trying to create safe meal programs, but often there are still places where the program comes up short. At this conference we address what to look for across your full program including product sourcing, space layout and even staffing.»

The conference runs 8:45 AM to 4:30 PM, followed by a 90-minute product expo and showcase. Speakers include a number of executives from companies helping colleges establish safe programs, several registered dietitians, and even college chefs. Companies exhibiting have all been vetted as food service ready – too many smaller bakeries have great gluten-free products, but their business just isn’t ready for college food service volumes.

The conference is open to all in the university administration, with concentration on food service directors and their management team, dietitians, and the chef or assistant chef. The networking opportunities throughout the day will help many attendees address questions they may have with their own programs.
